Crispy Pork Tenderloin Sandwich
Along with corn, the highest literacy rate in the US, and not being Illinois, breaded pork tenderloin sandwiches are the pride of Iowa. There are any number of topping combinations, but in the humble opinion of this author, yellow mustard and dill pickles are the way to go.
Ingredients
- 2 tbsp All-purpose flour
- 1/2 tbsp Salt
- 1/4 tbsp Pepper
- 1 Large Egg
- 3 1/2 tbsp Panko Bread Crumb
- 1/2 tbsp Shredded Parmesan Cheese
- 1/2 to 3/4 lb Pork Tenderloin
- 2 tbsp Canola or Vegetable Oil
- 4 Hamburger buns, pretzel hamburger buns, or kaiser rolls
Instructions
- In a shallow bowl, mix flour, salt and pepper. Place egg in another shallow bowl. Combine bread crumbs and Parmesan in another bowl.
- Cut tenderloin crosswise into 4 slices; drape a sheet of plastic wrap over the slices and pound flat with a mallet to roughly ¼” thickness. Remove plastic wrap. Coat slices in flour mixture, shake off excess. Dip slices in egg, then in the crumb and cheese mixture.
- Place a large skillet with oil over medium heat. Cook pork 2-3 minutes per side until golden brown. Remove from skillet and drain on a cooling rack over paper towels. Serve on buns with desired toppings.
