The Berkshire breed is a slower growing breed that has long been sought after for its deep red color and the tender and rich flavor of the meat. We use our own time honored and award winning recipe to cure and smoke our hams. Combine the richness of Berkshire pork with our cure flavor and technique and you have a ham people drive from great distances for this center of the plate showpiece.
Our hams are expertly smoked and fully cooked. To prepare at home leave wrapped in foil and gently reheat in a 275F oven on a rack in a shallow baking dish. Be sure and put a small amount of water in the dish and bake for 8-10 minutes per pound. Overheating will cause the ham to dry out and lose flavor.
